Lentil and White Bean Sloppy Joes

Satisfying veggie sloppy joes with lentils, white beans, and chilies. Meat-free deliciousness!
Ingredients:
  • 3/4 cup dried lentils, sorted, rinsed
  • 1 tablespoon olive oil
  • 1 cup finely chopped onions
  • 1 cup finely chopped poblano chile (about 1 medium)
  • 1/2 cup finely chopped carrot
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons packed brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 can (15 oz) white beans, drained, rinsed
  • Hot sauce, if desired
  • Mini burger buns (about 2 1/2 inches in diameter), split
Instructions:
  • In a 2-quart saucepan, bring 4 cups of water to a boil with lentils. Simmer covered for about 20 minutes until tender. Drain and set aside.
  • In a large skillet over medium-high heat, heat oil. Add onions, chile, and carrot, then sprinkle with salt. Sauté until tender, about 5 to 7 minutes, stirring occasionally. Stir in garlic and cook for an additional minute.
  • Combine the rich flavors of ketchup, brown sugar, Worcestershire sauce, and mustard. Gently mix in the beans and cooked lentils. Simmer over medium heat until everything is warm and the sauce starts to bubble. Add a touch of hot sauce for a kick. Enjoy the delicious mixture piled high in buns.
