Lentils and feta tossed in zesty chimichurri for a flavorful salad.
Ingredients:
  • 1 pound lentils
  • 1 cup extra-virgin olive oil
  • 0.25 cup red wine vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 1 cup chopped fresh parsley
  • 0.5 cup chopped fresh cilantro
  • 2 tablespoons crumbled feta cheese, or to taste
Instructions:
  • 1. Set up a steamer in a saucepan, fill with water just below the steamer. Bring to a boil. Add lentils, cover, and steam until tender, about 30-35 minutes, adding water if needed. Transfer lentils to a serving bowl.
  • In a blender, combine oil, vinegar, garlic, oregano, red pepper flakes, and salt until smooth. Add parsley and cilantro, and pulse briefly to mix in the herbs.
  • Drizzle lentils with 3 tablespoons of tangy chimichurri sauce and sprinkle salad with feta cheese. Gently toss to ensure everything is well-coated. Save any extra sauce in a sealed container in the fridge for later.
