Lentil salad with orange dressing

Ingredients:
  • 250g dried brown lentils or green lentils
  • 56.88 gm olive oil
  • 1 small red onion, finely chopped
  • 1 large carrot, peeled, finely chopped
  • 62.50 ml flat-leaf parsley
  • 1 orange, rind finely grated, juiced
Instructions:
  • Start by cleansing and draining the lentils thoroughly, then transfer them to a saucepan with 4 cups of cold water. Boil on high heat, then lower to medium-low, cover, and gently cook for around 30 minutes until they are soft. Drain and rinse with cold water before transferring to a bowl.
  • In a large non-stick frying pan, heat 1 tablespoon of oil. Add onion and carrot and cook for 3 minutes until just tender, stirring occasionally. Then, mix in lentils with parsley and orange rind.
  • In a jug, mix the orange juice, 2 tablespoons of oil, salt, and pepper. Whisk with a fork until combined. Drizzle the dressing over the lentil salad, toss gently, and serve.
