Flavorful lentil sloppy Joes with irresistible spice blend. A satisfying meatless option perfect for meal prep or freezing.
Ingredients:
  • 1 cup green lentils
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced small
  • 1 green pepper, diced small
  • 2 small carrots, diced small
  • 3 cloves garlic, minced
  • 1 tablespoon mild chili powder
  • 2 teaspoons paprika
  • 1/2 cup ketchup
  • 1 cup tomato sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 1/2 cup water
  • Salt and pepper, to taste
  • Buns, for serving
  • Sliced red onion, for serving
  • Pickles, for serving
Instructions:
  • Prepare the lentils: Thoroughly rinse the lentils, then place them in a pot with 4 cups of water and 1/4 teaspoon of salt. Bring to a gentle simmer, cover, and cook over low heat until the lentils are tender yet still firm, typically 20 to 25 minutes. Drain and set aside.
  • Prepare the savory sloppy joe filling by sautéing the onion, green pepper, carrots, and garlic in olive oil with a pinch of salt and pepper until softened. Add in the spices, ketchup, tomato sauce, vinegar, brown sugar, water, and reserved lentils. Combine everything thoroughly in the skillet.
  • Simmer the sloppy joe mixture to meld the flavors, adjusting seasoning with a pinch of salt and pepper. Sweeten with an extra tablespoon of brown sugar or add a dash of apple cider vinegar for a touch of tartness.
  • Assemble the sandwiches by toasting your buns, layering thinly sliced red onions on the bottom half of each bun. Then add 1/3 to 1/2 cup of the sloppy joe filling on top. Finish off with pickles and enjoy right away. For leftovers, store the sloppy joe mixture in the fridge for a few days or freeze it in an airtight container for up to 3 months. Reheat gently on the stove with a splash of water and serve over a baked sweet potato for a delicious lunch option.
