Quick and easy lentil-corn pilaf, a delightful side dish ready in 30 minutes.
Ingredients:
  • 1 cup dried lentils (8 oz), sorted, rinsed
  • 1/2 cup chopped red bell pepper
  • 1 cup frozen (thawed) or canned (drained) whole kernel corn
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili powder
Instructions:
  • In a 2-quart saucepan, bring water to a boil. Add lentils and bell pepper, then simmer covered for 15-20 minutes until lentils are tender. Drain, if needed.
  • Add in the rest of the ingredients and cook on low heat for 2 to 3 minutes, stirring occasionally, until the corn is tender and heated through.
