Onion-infused rice and lentil medley, topped with creamy yogurt or sour cream. Easy yet delectable!
Ingredients:
  • 6 tablespoons olive oil
  • 1 large white onion, sliced into rings
  • 1.3333333730698 cups uncooked green lentils
  • 0.75 cup uncooked long-grain white rice
  • salt and pepper to taste
  • 0.25 cup plain yogurt or sour cream
Instructions:
  • Heat the fragrant olive oil in a wide skillet over a gentle flame. Add the onions and sauté for 10 minutes until beautifully caramelized. Take off the heat and reserve for later.
  • In a medium saucepan, add lentils and cover with lightly salted water. Bring to a boil, then simmer for about 15 minutes.
  • Combine rice, lentils, and water in a saucepan. Season with salt and pepper. Cover and simmer for 15-20 minutes until rice and lentils are tender.
  • Incorporate half of the onions into the lentil mixture, then garnish the dish with yogurt or sour cream and the rest of the onions before serving.
