Lentils with spiced onions and vegetable salad

Try flavorful lentils with spiced onions and veggie salad for a satisfying meatless meal.
Ingredients:
  • 250.00 ml dried red lentils
  • 750.00 gm water
  • 125.00 ml burghul (cracked wheat)
  • 1 brown onion, chopped
  • 1 large red onion, thinly sliced
  • 1/2 tsp sumac
  • 1.25 gm paprika
  • Pinch ground cumin
  • 125.00 ml flat-leaf parsley leaves, finely chopped
  • 2 tomatoes, diced
  • 2 cucumbers, diced
  • 1 small red onion, diced
  • 62.50 ml flat-leaf parsley, finely chopped
  • 1 small lemon, juiced
Instructions:
  • In a heavy-based saucepan, simmer lentils in water until tender, about 25 minutes. Skim off any froth that forms. Remove from heat, then stir in bulgur. Cover and let rest.
  • Heat oil in a hot frying pan. Saute onion until soft, about 5 minutes. Combine sauteed onion with lentil mixture and mix well. If needed, stir in more burghul to reach desired consistency.
  • For spiced onions: Mix ingredients in a bowl and generously season with pepper.
  • In a bowl, mix together ingredients with a pinch of salt.
  • Plate the lentils elegantly and accompany them with aromatic spiced onions and a fresh vegetable salad.
