Chickpea mash in lettuce wraps with avocado, tomato, and olives - a refreshing twist on tacos.
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 clove garlic, chopped
  • 1 (16 ounce) garbanzo beans, drained and rinsed
  • 1 tablespoon taco seasoning mix
  • 0.5 teaspoon ground cumin
  • 0.75 cup chicken broth
  • salt and ground black pepper to taste
  • 1 head iceberg lettuce, halved
  • 1 avocado, sliced
  • 1 tomato, chopped
  • 1 (3 ounce) can sliced black olives
Instructions:
  • In a large skillet, warm olive oil. Cook onions until translucent, about 5 minutes, then add garlic and cook until fragrant, about 2 minutes.
  • Combine garbanzo beans with flavorful taco seasoning and aromatic cumin in a skillet. Add chicken broth, cover, and bring to a boil. Simmer gently on low heat until beans are tender, approximately 10 minutes. Mash the mixture with a potato masher and season with salt and pepper to taste.
  • Remove lettuce "cups" from the center of each half and stuff with garbanzo bean mixture. Garnish with avocado, tomato, and olives.
