Exciting Asian lettuce packets stuffed with flavorful minced chicken, peanuts, ginger, and sesame.
Ingredients:
  • 1/2 cup apricot preserves
  • 1/3 cup fresh lime juice
  • 2 tablespoons lite soy sauce
  • 2 garlic cloves, minced
  • 1 teaspoon cornstarch
  • 1 tablespoon dark sesame oil or vegetable oil
  • 2 boneless skinless chicken breast halves, finely chopped
  • 1/2 cup chopped seeded cucumber
  • 1/2 cup grated carrot
  • 2 tablespoons chopped peanuts
  • 1 teaspoon grated gingerroot
  • 1 teaspoon chopped garlic
  • 16 leaves (about 2 heads) butterhead (Bibb or Boston) lettuce
Instructions:
  • Combine preserves, lime juice, soy sauce, and garlic in a small bowl and mix well. Transfer 1/4 cup of the sauce to a 1-cup measuring cup. Mix in cornstarch until smooth and set aside. Chill the remaining sauce in the bowl until ready to serve.
  • In a skillet, heat oil over medium-high heat. Cook chicken until browned, stirring frequently, for 5 to 7 minutes. Add cucumber, carrot, peanuts, gingerroot, and garlic. Mix in the sauce with cornstarch. Stir constantly for 2 to 3 minutes until thickened and bubbly. Transfer to a dish, cover and refrigerate for 30 minutes until cooled.
  • Place a generous 2 tablespoons of the flavorful chicken mixture onto the center of each crisp lettuce leaf. Gently fold the sides of the lettuce leaf in towards the center and roll up like a delicious burrito. Secure each wrap with a toothpick and proudly display them seam side down on a serving platter. Serve these delightful wraps immediately or refrigerate them for later. Enjoy them with your favorite sauce on the side.
