Whip up a quick and vibrant primavera pasta dish with penne, zucchini, summer squash, and a zesty Parmesan pepper dressing - ready in under 30 minutes for a delightful mid-week meal.
Ingredients:
  • 1 (16 ounce) package penne pasta (such as Barilla® Plus)
  • 3 tablespoons olive oil
  • 1 yellow squash, sliced and quartered
  • 1 zucchini, sliced and quartered
  • 0.5 teaspoon minced garlic
  • 0.5 (16 ounce) bottle light Parmesan-peppercorn dressing (such as Cains®)
  • salt and ground black pepper to taste
Instructions:
  • 1. Boil a pot of salted water, then add penne and cook for about 11 minutes until al dente. Drain and transfer to a bowl.
  • Heat a skillet over medium heat, then add olive oil and heat for 30 seconds. Saute yellow squash, zucchini, and garlic until tender, about 5 minutes. Season with salt and pepper. Mix with cooked pasta, dressing, and toss well. Serve hot or cold.
