Whip up a quick and flavorful Asian beef stir-fry in just 35 minutes!
Ingredients:
  • 42.00 gm lime juice
  • 20.00 ml finely grated ginger
  • 2 garlic cloves, crushed
  • 42.00 gm soy sauce
  • 1 tsp cracked black pepper
  • 500g beef scotch fillet, thinly sliced
  • 18.20 gm peanut oil
  • 1 red onion, cut into wedges
  • 1 red capsicum, chopped
  • 1 large carrot, thinly sliced diagonally
  • 425g can baby corn spears, halved lengthways
  • 1 bunch pak choy, trimmed, quartered lengthways
  • 5.00 gm cornflour
  • 160ml beef stock
  • Steamed jasmine rice, to serve
  • Coriander leaves, to serve
Instructions:
  • In a small bowl, mix lime juice, ginger, garlic, soy sauce, and pepper. Transfer half of the mixture to a large bowl. Add beef and toss to coat. Save the rest of the lime mixture for later.
  • Heat a generous amount of oil in a wok or large frying pan over high heat. Sear the beef in batches for 1-2 minutes until evenly browned. Place the browned beef in a heatproof bowl for later.
  • - Combine onion, capsicum, and carrot in the wok and sauté for 2 minutes until they start to brown. - Add beef back to the pan along with corn and pak choy. Cook for 1 minute until the pak choy turns bright green. - Mix cornflour and stock into the reserved lime mixture. Pour into the wok and stir-fry for 2 minutes until the mixture thickens and blends. - Serve over rice and garnish with coriander leaves before enjoying.
