Lime and chilli prawn stir-fry

Elevate your weeknight dinner with quick and delicious prawn and noodle stir-fry - a guaranteed family favorite!
Ingredients:
  • 500g peeled green prawns, tails intact
  • 2 garlic cloves, crushed
  • 1 long fresh green chilli, finely chopped
  • 1 lime, rind finely grated, juiced, plus extra wedges, to serve
  • 36.40 gm olive oil
  • 1 red onion, sliced
  • 1 small red capsicum, deseeded, sliced
  • 1 bunch gai lan (Chinese broccoli), trimmed, cut into 6cm lengths
  • 200g pkt shelf-fresh udon noodles
  • Fresh coriander leaves, to serve
  • Coconut cream, to serve
  • Thinly sliced green shallots, to serve (optional)
Instructions:
  • Butterfly each prawn by making a cut down the back and removing the vein. Combine prawns with garlic, chilli, lime rind, and 1 tablespoon of oil in a large bowl. Season generously and mix thoroughly.
  • Heat 1 tablespoon of oil in a spacious wok or non-stick frying pan, ensuring the base is well coated. Sear the prawns in separate batches for 2-3 minutes until they turn golden and are fully cooked. Keep them warm by covering them and setting them aside.
  • Sauté the onion in a hot wok until just softened. Toss in capsicum and gai lan, stir-fry briefly. Add a splash of water and cook vegetables until tender. Mix in noodles, prawns, and lime juice, heat through, and enjoy!
  • Portion the mixture into individual serving bowls. Garnish generously with fresh coriander, then drizzle with luscious coconut cream and sprinkle with green shallots, if desired.
