Delicate and airy mini treats, ideal for any tea time indulgence.
Ingredients:
  • 125g butter, softened
  • 200g caster sugar
  • 2 tsp finely grated lime rind
  • 45g desiccated coconut
  • 75g plain flour
  • 40g self-raising flour
  • 90g yoghurt
  • Shredded coconut, to decorate
  • 100g butter, softened
  • 500g icing sugar mixture
  • 125ml coconut milk
  • 21.00 gm lime juice
Instructions:
  • Preheat your oven to 180°C and prepare 15 muffin pans with paper liners.
  • In a mixer, combine butter, sugar, and lime rind until light and creamy. Add eggs one at a time, mixing well. Alternate adding coconut, mixed flours, and yogurt until just combined. Mix gently.
  • Divide the mixture evenly among the prepared pans and spread it out evenly. Bake in the oven for 15-20 minutes or until fully cooked. Let it cool completely on a wire rack.
  • Beat the butter with an electric mixer until very pale. Gradually add icing sugar, beating well after each addition. Mix in coconut milk and lime juice until well combined.
  • Spread the icing over each cake using a round-bladed knife or pallet knife, then sprinkle with coconut before serving.
