Lime coconut cake

Luscious lime and coconut combine in this tropical cake sensation.
Ingredients:
  • Melted butter, to grease
  • 200g (1 1/3 cups) self-raising flour, sifted
  • 155g (3/4 cup) caster sugar
  • 4.00 gm baking powder
  • 65g (1 cup) shredded coconut
  • 150g butter, melted
  • 3 eggs
  • 125ml (1/2 cup) fresh lime juice
  • 20.00 ml finely grated lime rind
Instructions:
  • Preheat your oven to 180°C. Grease an 18cm square cake pan with melted butter and line it with non-stick baking paper, leaving some overhang on the edges.
  • In a food processor, pulse together flour, sugar, baking powder, and 50g (2/3 cup) of coconut for 20 seconds. Then add butter, eggs, lime juice, and lime rind. Continue processing until mixture is well combined.
  • 1. Pour the mixture into the pan, ensuring the surface is smooth. Bake for 40 minutes. Sprinkle the remaining coconut on top and bake for an additional 10 minutes, or until a skewer inserted into the center comes out clean. Allow it to cool for 5 minutes, then transfer to a wire rack to cool completely.
