Ingredients:
  • 1/2 x 250g packet butternut snap biscuits
  • 30.40 gm white chocolate bits
  • 18.15 gm moist coconut flakes
  • 250g packet cream cheese, chopped
  • 240.00 gm smooth ricotta
  • 126.25 gm thickened cream
  • 75.00 gm icing sugar mixture
  • 3 tsp finely grated lime rind
  • 21.00 gm lime juice
  • Whipped cream, to serve
Instructions:
  • Combine the biscuits, chocolate bits, and half of the coconut in a food processor and pulse until finely chopped. Transfer the mixture to a bowl.
  • Blend cream cheese, ricotta, cream, icing sugar, lime zest, and lime juice until velvety and fully mixed.
  • Layer 1/2 of the cream cheese mixture evenly between 4 x 1 1/2 cup-capacity serving glasses. Sprinkle each with 1/2 of the biscuit mixture. Repeat layers. Top with dollops of whipped cream and a sprinkle of remaining coconut before serving.
