Lime and coconut rice with sugared pineapple

Make quick and delicious microwave rice pudding.
Ingredients:
  • 200.00 gm white long-grain rice
  • 500.00 gm boiling water
  • 400ml can coconut milk
  • 107.50 gm caster sugar
  • 2 tsp finely grated lime rind
  • 21.00 gm lime juice
  • 2.20 gm vanilla extract
  • 45.00 gm firmly packed brown sugar
  • 3 x 5mm-thick slices fresh pineapple, quartered
  • Whipped cream, to serve
  • Lime zest, to serve
Instructions:
  • Add rice to a 2.2 litre microwave rice cooker, followed by boiling water. Microwave covered on HIGH for 12 minutes, or until water is fully absorbed.
  • Pour in the luscious coconut milk and sprinkle in the sweet caster sugar. Cover the mixture and microwave on HIGH for 5 minutes to meld the flavors together perfectly.
  • Microwave the uncovered mixture on HIGH for 3 to 4 minutes until it thickens. Stir gently.
  • Incorporate lime zest, lime juice, and vanilla.
  • In a shallow bowl, spread the brown sugar. Dip the pineapple in the sugar, ensuring both sides are coated. Serve the rice pudding warm or cold with the sugared pineapple, a dollop of cream, and a sprinkle of lime zest.
