Ingredients:
  • 7-8kg leg of ham
  • 350g jar ginger lemon and lime marmalade
  • 118.80 gm brown sugar
  • 46.80 gm Dijon mustard
  • 44.00 gm sweet chilli sauce
  • 250.00 ml macadamia nuts, chopped
Instructions:
  • Place oven rack on the bottom level. Preheat oven to 150C. Line a large roasting pan with 2 sheets of baking paper.
  • Peel off ham rind, then score the fat in a diamond pattern using a sharp knife without cutting deeper than 5mm.
  • Arrange the ham in a roasting pan.
  • Mix all the remaining ingredients in a bowl, then spread half of the mixture over the ham. Bake in the oven for 45 minutes.
  • Take the dish out of the oven and gently pour the rest of the glaze on top. Place it back in the oven to bake for another 45 minutes, or until it turns golden brown. Slice and serve either hot, cold, or at room temperature.
