Bake a delightful passionfruit cake - perfect for any occasion, loved by all with its light, fluffy texture and bursting with delicious flavors.
Ingredients:
  • Melted butter, for greasing
  • 280g (1 1/4 cups) caster sugar
  • 125ml (1/2 cup) milk
  • 125g butter, cubed
  • 225g (1 1/2 cups) self-raising flour
  • 2 tsp finely grated lime rind
  • 60ml (1/4 cup) passionfruit pulp (about 3 passionfruit)
  • 3 eggs
  • 4 passionfruit, extra, to serve
  • Whipped cream, to serve
Instructions:
  • Preheat the oven to 180°C. Grease a 3cm deep, 20 x 30cm cake pan with melted butter and line it with non-stick baking paper.
  • In a large saucepan over medium-low heat, combine sugar, milk, and butter. Stir with a whisk until smooth. Avoid boiling. (Check microwave tip.) Let it cool for 5 minutes off the heat before proceeding.
  • Sift half of the flour into the pan using a fine sieve and stir with a whisk until smooth. Add the remaining flour and stir until smooth. Mix in lime rind, passionfruit pulp, and eggs, stirring with the whisk until well combined.
  • Transfer the mixture to the pan and gently tap the pan on a flat surface to remove any air bubbles. Bake in the preheated oven for 35 minutes or until a skewer inserted in the middle comes out clean. Let it sit for 2 minutes before flipping onto a wire rack, then cool for 20 minutes before serving.
  • Halve the additional passionfruit and scoop out the pulp into a small bowl. Cut the freshly baked cake into squares, and present topped with whipped cream and a dollop of passionfruit pulp.
