Create tangy homemade mayo for seafood.
Ingredients:
  • 3 egg yolks
  • 11.80 gm dijon mustard
  • 1.20 gm sea salt
  • 1/2 tsp ground black pepper
  • 227.50 gm olive oil
  • 1 large lime, juiced
Instructions:
  • Combine egg yolks, mustard, sea salt, and pepper in a small food processor or blender until a thick and creamy consistency is achieved.
  • While the motor is running, drizzle the oil in a thin, steady stream until the mixture is thick and creamy. Incorporate 1/4 cup lime juice and process for 3 seconds. Store in an airtight container and chill in the refrigerator. Enjoy with Balmain bugs and prawns.
