Try this tangy homemade lime pickle recipe, perfect with ham!
Ingredients:
  • 2 gallons water
  • 2 cups pickling lime (calcium hydroxide)
  • 7 pounds cucumbers, cut into chunks
  • 6 cups cold vinegar
  • 8 cups white sugar
  • 2 teaspoons pickling spice
  • 1 teaspoon celery seed
  • 0.5 teaspoon whole cloves
  • 1 drop food coloring, or as desired
Instructions:
  • Combine 2 gallons of water with pickling lime in a large bowl, then add cucumbers. Allow them to soak for 24 hours, stirring occasionally. Drain and rinse cucumbers well under cold water.
  • Place cucumbers in a large bowl filled with ice water and let soak for 3 hours. Drain well.
  • In a large pot, combine cold vinegar with sugar, pickling spice, salt, celery seed, cloves, and food coloring, stirring until dissolved. Add cucumbers and marinate for 8 hours to overnight.
  • Bring the cucumber mixture to a boil, then promptly remove from heat.
  • Boil jars and lids for at least 5 minutes. Fill hot jars with cucumber mixture, leaving 1/4 inch of space from the top. Use a knife or spatula to remove air bubbles. Clean jar rims with a moist paper towel. Seal with lids and rings.
  • Prepare a large stockpot by positioning a rack on the bottom and filling it halfway with water. Once the water boils, carefully lower the jars into the pot with a holder, ensuring a 2-inch space between them. If needed, add more boiling water to ensure the jars are covered by at least 1 inch. Cover the pot, let the water reach a rolling boil, and process the jars for 15 minutes.
  • Take out the jars from the stockpot and place them on a cloth-covered or wood surface, spaced several inches apart, to cool. Press the top of each lid with a finger to confirm a tight seal (lid should not move). Store in a cool, dark place.
