Linguine with Asparagus, Bacon, and Arugula

Sautéed asparagus, bacon, arugula, and linguine tossed in zesty lemon juice for a simple and delicious dish.
Ingredients:
  • 1 pound linguine, uncooked
  • 0.33333334326744 pound sliced bacon, cut in half
  • 0.33333334326744 cup extra virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 0.5 pound fresh asparagus, trimmed and cut into 1/2 inch pieces
  • 1 (5 ounce) package baby arugula leaves
  • 0.25 cup fresh lemon juice
Instructions:
  • Bring a generously salted pot of water to a boil. Cook pasta until al dente, around 8 to 10 minutes. Drain and set aside.
  • Fry bacon in a large skillet on medium heat until crispy. Transfer to paper towels. Add olive oil to the skillet and sauté garlic and asparagus until fragrant, approximately 1 minute, stirring constantly.
  • Add the pasta to the skillet. Turn off the heat. Toss the pasta with fresh arugula, a splash of zesty lemon juice, and crispy bacon pieces.
