Linguine carbonara primavera

Create a quick and delicious pasta dish in just 30 minutes with crispy bacon, snow peas, and asparagus.
Ingredients:
  • 200g pkt short-cut bacon, cut into thin strips
  • 400g linguine
  • 150g snow peas, thinly sliced
  • 1 bunch asparagus, cut into thirds
  • 60g pea
  • 4 Free Range Eggs
  • 1 tsp lemon rind, finely grated
  • 60ml lemon juice
  • 50g parmesan
Instructions:
  • In a medium frying pan over medium heat, sizzle bacon in hot oil until golden, stirring occasionally, for about 5 minutes.
  • Simmer the linguine in a pot of boiling water according to package instructions until al dente, then toss in the snow peas, asparagus, and peas for the final 2 minutes of cooking.
  • As the pasta cooks, combine eggs, lemon zest, lemon juice in a large bowl. Mix in bacon and half of the Parmesan cheese. Season to taste.
  • Strain the pasta and vegetables then promptly mix them into the egg mixture. Toss thoroughly until everything is evenly coated, allowing the heat to create a luscious creamy sauce.
  • Serve the pasta mixture in individual bowls and sprinkle the remaining parmesan on top.
