Delicious bar-style Linzer cookies featuring almond dough filled with apricot preserves and dried apricots.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.625 cup butter
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon zest
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped almonds
  • 0.25 cup chopped dried apricots
  • 0.5 cup apricot preserves
  • 2 teaspoons lemon juice
  • 1 egg white
  • 2 tablespoons finely chopped almonds
  • 1 tablespoon coarse granulated sugar
Instructions:
  • Combine flour, baking powder, and salt by sifting them together and set aside. Cream together butter, brown sugar, and cinnamon until fluffy in a medium bowl. Add lemon zest, egg, and vanilla, and mix well. Stir in 1 cup of chopped almonds followed by the sifted ingredients. Press 2/3 of the dough into the bottom of an 8x8 inch greased or parchment-lined baking pan. Roll the remaining dough into an 8 inch square between pieces of waxed paper. Chill all dough in the refrigerator for a minimum of 2 hours.
  • Once the dough is chilling, simmer the apricots in a small saucepan with enough water to cover them. Boil for three minutes, then let them cool. Drain any extra liquid, then combine the apricots with the preserves and lemon juice. Enjoy!
  • 1. Preheat oven to 350 degrees F (175 degrees C). Spread apricot filling evenly over chilled crust, leaving a 1/4 inch border. Cut chilled dough square into 1/2 inch strips. Arrange strips in a lattice design over the filling. Trim edges to fit and press them into the border. Brush top with egg white, sprinkle with remaining chopped almonds and coarse sugar.
  • Place in the preheated oven and bake for 15 to 20 minutes until the filling is bubbly and the crust is golden brown. Let it cool completely before cutting into squares.
