Plum-Cardamom Linzer Cookies

Delight your family with almond plum-cardamom linzer cookies - a delicious treat!
Ingredients:
  • 3/4 cup slivered almonds, toasted, ground
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon grated lemon peel
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1 1/4 cups butter, softened
  • 1 cup powdered sugar, sifted
  • 1 cup plum jam or jelly
  • 3 tablespoons powdered sugar
Instructions:
  • Combine ground almonds, flour, lemon peel, baking powder, cardamom, and salt in a medium bowl, whisk together, and set aside. In a large bowl, use an electric mixer to beat butter until creamy. Gradually add 1 cup of powdered sugar, beat until light and fluffy. On low speed, mix in the flour mixture until just blended. Divide the dough in half, cover with plastic wrap, and refrigerate for 1 hour or until firm.
  • Preheat oven to 350°F and prepare a cookie sheet by lining it with parchment paper or lightly greasing it with shortening or cooking spray.
  • Roll out each portion of dough on a lightly floured surface to 1/8-inch thickness. Use a floured 2 1/2-inch fluted round or scalloped cookie cutter to cut out shapes. For half of the cookies, cut out the centers using a 1 1/4-inch fluted round cookie cutter. Place the solid cookies, hollow cookies, and cutout centers on cookie sheets with 1 inch of space between each.
  • Bake for 9 to 11 minutes until edges are lightly golden. Transfer the cookies from the sheets to cooling racks and let them cool completely. Spread 2 teaspoons of jam on each solid cookie. Place a hollow cookie on top of each. Optionally, add a little more jam into the opening of each. Dust the sandwich cookies and cutouts with 3 tablespoons of powdered sugar.
