Ingredients:
  • 40.00 gm caster sugar
  • 125ml port
  • 1 cinnamon stick
  • 825g can plums, drained, syrup reserved
  • 125ml cream
  • 1/2 tsp ground cardamom
Instructions:
  • Combine the sugar, port, cinnamon stick, and reserved syrup in a small saucepan. Stir over low heat until the sugar dissolves. Bring to a boil, then simmer over medium-low heat for 15-20 minutes until reduced by half (about 3/4 cup or 185ml).
  • Mix the cream and cardamom together, then set it aside.
  • Arrange the plums into serving glasses and drizzle with the warm syrup. Top with a spoonful of the cardamom cream before serving.
