Plums in lime syrup

Ingredients:
  • 500.00 gm water
  • 2 limes, skin peeled in strips, white pith removed
  • 82.50 ml mint leaves
  • 12 plums, halved, stones removed
Instructions:
  • In a saucepan, combine water, sugar, lemon rind, and fresh mint. Stir over gentle heat until the sugar completely dissolves. Allow it to gently simmer.
  • Place plums in a saucepan and cover with a circle of non-stick baking paper. Cook for about 6 minutes until plums are tender.
  • Transfer plums to serving bowls using a slotted spoon. Strain the syrup and pour it over the plums. Let it cool to room temperature before serving.
