Little filo quiches

Easy and delicious feta quiches, perfect for snacking.
Ingredients:
  • 4 sheets filo pastry
  • Olive oil spray
  • 3 eggs
  • 185ml thickened cream
  • 1 garlic clove, crushed
  • 100g reduced-fat feta cheese, crumbled
  • 2 tsp chopped thyme
  • 2 spring onions, finely sliced
  • 8 vine-ripened cherry tomatoes
Instructions:
  • Preheat your oven to 180°C and generously grease 8 of the 12 muffin pan holes.
  • Lay down one filo pastry sheet on a board and lightly spray with olive oil. Continue stacking remaining sheets on top, spraying each sheet with oil before adding the next.
  • Cut the filo stacks into quarters widthways, then halve them across for 8 squares. Gently press a filo square into each greased muffin pan hole.
  • Combine the eggs and cream in a bowl and beat them together.
  • Combine the garlic, feta, thyme, and spring onions, then season generously with salt and pepper.
  • Fill the filo cases with the feta mixture and garnish each one with a cherry tomato on top.
  • Bake in the oven until the filling sets and the pastry turns golden brown, about 15-20 minutes. Enjoy hot or cold.
