Game day breakfast: Tex-Mex stuffed tortilla bowls with eggs, beans, and toppings to fuel you all morning.
Ingredients:
  • 6 eggs
  • 1/4 cup half-and-half
  • 2 teaspoons butter
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 4 medium green onions, sliced (1/2 cup)
  • 6 tortilla bowls from 1 package (6.7 oz) Old El Paso™ Flour Soft Tortilla Bowls (8 Count)
  • 1 cup shredded Cheddar cheese (4 oz)
  • 1/3 cup thick & chunky salsa
  • 1 avocado, pitted, peeled and diced
  • 1/3 cup sour cream
Instructions:
  • In a large bowl, whisk together eggs, half-and-half, and salt until well combined. Heat butter in a 10-inch nonstick skillet over medium heat. Pour in the egg mixture and cook for about 7 minutes, gently scraping the cooked eggs from the bottom of the skillet until the mixture is firm yet still slightly moist. Fold in beans and green onions, stirring gently to combine. Enjoy!
  • 1. Heat tortillas according to package instructions, ensuring they are warm and pliable. 2. Divide the egg mixture evenly among the tortillas. 3. Sprinkle with desired toppings. Optionally, garnish with the dark green tops of green onions for a finishing touch.
