Irresistible vegetarian baked potato board with a delicious twist using Pure Farmland's Simply Seasoned Protein Starters for a game day or fall dinner.
Ingredients:
  • 4 small russet potatoes, skin scrubbed (about 2 lbs)
  • 4 small sweet potatoes, skin scrubbed (about 2 lbs)
  • 4 cups broccoli florets
  • 1 tablespoon olive oil
  • 0.5 teaspoon kosher salt
  • 1 (16 ounce) package Pure Farmland® Simply Seasoned Plant-Based Protein Starters
  • 1 (15 ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup reduced-fat shredded Cheddar cheese
  • 0.5 cup low-fat plain Greek yogurt
  • 0.5 cup sliced red onion
  • 0.5 cup low-sugar, low-sodium BBQ sauce
  • 0.25 cup chopped fresh chives
  • 2 small jalapenos, sliced
Instructions:
  • Preheat the oven to 425 degrees F. Line a large sheet tray with foil. Use a fork to prick the russet and sweet potatoes 2 to 3 times each. Arrange them on the sheet tray in a single layer.
  • Roast the potatoes for 45-55 minutes or until tender. Allow them to cool for 10 minutes before gently slicing the top of each potato to open.
  • - Cover a large sheet tray with foil and add the broccoli. - Drizzle 1 tablespoon of olive oil and sprinkle 1/2 teaspoon of salt over the broccoli. Mix well. - Roast in the oven for about 20 minutes until the broccoli is tender and slightly charred. - Allow the broccoli to rest on the tray to keep warm for about 10 minutes. - Transfer the broccoli to a small serving bowl. Enjoy!
  • Heat a large nonstick skillet over medium-high heat. Add Pure Farmland® Protein Starters and cook, breaking them apart with a spatula until they brown and all moisture has evaporated, about 12 to 14 minutes. Transfer to a serving bowl.
  • Arrange the potatoes, cooked Pure Farmland® Protein Starter, roasted broccoli, black beans, Cheddar cheese, Greek yogurt, red onion, BBQ sauce, chives, and jalapenos on a large serving board. Serve warm.
