Loaded potato with Mexican beanz

Create a satisfying meatless meal by topping baked potatoes with flavorful Mexican beans!
Ingredients:
  • 2 large potatoes
  • 1/2 avocado, stoned, peeled, finely chopped
  • 21.00 gm lime juice
  • 420g can Beanz Creationz Fiery Mexican Style Beanz
  • 60g tasty cheese
  • 37.60 gm sour cream
  • 40.00 ml coriander leaves
Instructions:
  • Preheat the oven to 220°C. Coat the potatoes with olive oil spray and individually wrap them in foil. Bake for 60 minutes until they are golden and tender.
  • Combine ripe avocado with fresh lime juice in a small bowl.
  • In a heatproof bowl, microwave the beans covered on high for 1 minute. Stir and microwave for an additional 1 minute or until heated through.
  • On serving plates, slit the top of each potato with a sharp knife. Gently squeeze the base to open. Sprinkle with cheddar, then top with beans, avocado mixture, and sour cream. Serve with a sprinkle of coriander.
