Cheesy ranch potato chip nachos topped with crispy bacon, served with tangy sour cream dip.
Ingredients:
  • 1 (1 ounce) packet ranch seasoning mix, divided
  • 10 slices bacon
  • 12 ounces  wavy, kettle cooked potato chips, from 1 1/2 bags, such as Cape Cod Waves
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded Monterey Jack cheese
Instructions:
  • Heat the oven to 425°F (220°C) and carefully line a big baking sheet with parchment paper. Spread out the chips evenly on the sheet.
  • Combine 1 tablespoon of savory ranch seasoning with sour cream, stirring until evenly mixed; then, set it aside.
  • In a large skillet over medium-high heat, cook the bacon, turning occasionally, until evenly browned, for about 10 minutes. Drain the bacon on paper towels and crumble once it's cool enough to handle.
  • Coat the shredded cheeses with the remaining ranch seasoning and sprinkle the mixture over the chips. Top generously with bacon.
  • Bake in the preheated oven for 10 to 12 minutes until the cheese is melted and the chips are crispy on the edges. Sprinkle with green onions and hot sauce before serving with the reserved sour cream dipping sauce.
