Pulled pork and cheese stuffed Tater Tot® bites - a crowd-pleasing party appetizer.
Ingredients:
  • cooking spray
  • 1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • 8 ounces prepared pulled pork
  • 0.75 cup shredded Cheddar cheese
  • 0.25 cup BBQ sauce
  • 0.33 cup sour cream
  • 3 medium green onions, chopped
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C), then generously spray a 12-cup muffin pan with nonstick cooking spray.
  • Place a generous handful of frozen potato nuggets into each cozy muffin cup.
  • Place in the hot oven for 10 minutes.
  • Take the muffin pan out of the oven. Use a small glass to gently press down the tots in each cup, shaping them into potato cups. Put the pan back in the oven and bake until deep golden brown, around 15 more minutes.
  • Take the pan out of the oven and evenly spoon pulled pork into each cup. Top each potato cup with 1 tablespoon of shredded cheese, making sure to keep it on top of the pork (not around the sides of the cups).
  • Bake in the oven for 4 to 5 minutes, until the cheese is melted. Then, transfer the potato cups to a serving platter.
  • Before serving, generously drizzle with BBQ sauce, top with a dollop of sour cream, and finish with a sprinkle of green onions.
