Delicious crispy potato nuggets topped with barbequed pulled pork, Cheddar cheese sauce, and pinto beans - a tasty twist on traditional nachos, great for tailgating.
Ingredients:
  • 1 (28 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)
  • salt to taste
  • 2.5 cups cooked pulled pork
  • 1 cup barbeque sauce
  • 0.25 cup sour cream
  • 0.5 teaspoon smoked paprika
  • 2 tablespoons unsalted butter
  • 1.5 tablespoons all-purpose flour
  • 2.5 cups milk
  • 5 ounces shredded white Cheddar cheese
  • 1 cup canned pinto beans, drained
  • 0.5 cup chopped roasted red bell peppers
  • 1 tablespoon thinly sliced green onion
  • 1 teaspoon minced thyme
Instructions:
  • Preheat oven to a toasty 425 degrees F (220 degrees C), then lay out potato nuggets in a glorious single layer on a baking sheet.
  • Bake in the preheated oven for 20-25 minutes until golden and crispy. Then transfer to a large bowl and lightly season with salt.
  • Combine the succulent pulled pork with the flavorful barbeque sauce in a bowl, ensuring every delicious morsel is perfectly coated.
  • Combine sour cream and smoked paprika, whisk until smooth in a small bowl.
  • In a saucepan over medium heat, melt butter. Add flour and whisk until a paste forms, about 2 to 3 minutes. Gradually whisk in milk until smooth. Cook and stir until the sauce thickens to coat the back of a spoon, approximately 5 minutes. Remove from heat and whisk in Cheddar cheese until melted. Season the sauce with salt and pepper to taste.
  • Pour the rich Cheddar cheese sauce over the golden potato nuggets, generously layer with savory pulled pork, and add dollops of creamy sour cream. Finish by topping it all off with hearty pinto beans, roasted peppers, fresh green onions, and aromatic thyme.
