Party-ready Loaded Sheet Pan Nachos - easy, delicious, perfect for any occasion!
Ingredients:
  • For the nachos:
  • 1 medium onion (about 1 cup), chopped
  • 1 pound ground beef (80-20 mix)
  • 1 teaspoon coriander
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon Morton kosher salt (maybe more)
  • 1 (16-ounce) bag tortilla chips, preferably thick and sturdy
  • 1 bell pepper, cored, halved and chopped (about 1 cup)
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 (2.25-ounce) can sliced black olives, about 1/4 cup
  • 1 to 1 1/2 cups grated cheddar cheese or shredded Mexican cheese blend
  • For garnish, optional:
  • 1 avocado, cubed
  • 2 scallions, green ends sliced thinly
  • 1 plum tomato, diced
  • 1/2 cup cilantro, chopped
  • 1 jalapeño pepper, seeded and thinly sliced
  • 1/3 cup sour cream
  • For the cilantro-lime crème:
  • Juice of one lime
  • 1/3 cup cilantro
  • Pinch of salt
Instructions:
  • Heat your oven to 400°F.
  • In a skillet, heat olive oil and cook onions until softened, about 5 minutes. Add beef, chili powder, coriander, oregano, and salt. Using a wooden spoon, brown the beef for 8-10 minutes. Remove from heat and set aside.
  • Spread a generous layer of 6 to 8 handfuls of tortilla chips on the pan, making sure they are close together and mostly in a single layer. Avoid stacking them too high.
  • Add the beef to the pan with the chips, ensuring it is evenly distributed. Be generous with the beef—it should cover the entire pan.
  • Top it off with colorful and flavorful bell peppers, hearty black beans, sweet corn, savory black olives, and melty cheese.
  • Bake the nachos in the oven for 5 to 7 minutes, until the cheese is melted and bubbly.
  • Prepare the cilantro lime crème: In a food processor, combine sour cream, lime juice, cilantro, and salt. Blend until smooth. Adjust seasoning with more salt, if desired. Alternatively, finely chop cilantro and mix it with sour cream, lime juice, and salt.
  • Drizzle the crème and serve: Take the sheet pan out of the oven, sprinkle with fresh cilantro, and generously drizzle the crème using a spoon. Serve the pan directly on the table with small bowls of garnishes on the side.
