Impress your loved ones with a quick and unforgettable lobster mornay.
Ingredients:
  • 2 (about 1.8kg) cooked whole lobsters, halved lengthways, cleaned
  • 50g butter
  • 40g (1/4 cup) plain flour
  • 80ml (1/3 cup) dry white wine
  • 410ml (1 2/3 cups) warm milk
  • 40g (1/2 cup) coarsely grated cheddar
  • Salt and ground white pepper
  • 40.00 ml finely chopped fresh chives
  • Potato wedges, to serve
  • Mixed green salad leaves, to serve
Instructions:
  • Take out the meat from lobster shells, chop it roughly, and set it aside. Arrange the lobster shells, cut-side up, in a large roasting pan. Preheat the grill on high heat.
  • In a saucepan over medium heat, melt butter until foamy. Stir in flour with a wooden spoon until mixture bubbles and pulls away from the pan, about 1-2 minutes. Take off the heat.
  • Whisk in the wine until smooth, then gradually add milk while continuing to whisk. Cook over medium heat, stirring constantly until sauce thickens. Add cheese and stir until melted. Remove from heat, season with salt and pepper, then mix in chives and lobster meat.
  • Divide the lobster mixture evenly into each shell. Grill under a preheated broiler about 6cm from the heat for 4 minutes or until beautifully golden. Take it out from the heat.
  • Arrange the lobster on plates and serve promptly with potato wedges and mixed green salad.
