Elevate classic breakfast doughnuts with customizable chocolate or maple glaze.
Ingredients:
  • 3 (.25 ounce) envelopes active dry yeast
  • 0.5 cup warm water
  • 0.5 cup shortening
  • 1 cup boiling water
  • 1 cup canned evaporated milk
  • 0.5 cup white sugar
  • 2 teaspoons salt
  • 8.5 cups all-purpose flour
  • 1 quart oil for frying, or as needed
  • 0.75 cup confectioners' sugar
  • 1 tablespoon water, or as needed
Instructions:
  • First, activate the yeast by dissolving it in warm water in a small bowl. Let it sit until it gets bubbly, which should take about 10 minutes. Meanwhile, in a large bowl, dissolve the shortening in 1 cup of boiling water. Allow the mixture to cool until it reaches lukewarm temperature.
  • Combine evaporated milk, eggs, nutmeg, sugar, and salt with shortening and water. Add yeast mixture and 1 cup of flour, mixing well. Slowly incorporate the rest of the flour 1 cup at a time until the dough is firm. Knead on a lightly floured surface for approximately 5 minutes until smooth. Allow to rest for 10 minutes.
  • On a floured surface, roll out the dough to 1/4-inch thickness. Cut into strips that are 1-inch wide and 6 inches long. Transfer the strips to waxed paper and allow them to rise until doubled in size, approximately 1 hour.
  • Preheat oil in a deep fryer or large heavy skillet to 350 degrees F (175 degrees C), then gently transfer doughnuts from the waxed paper to the hot oil, frying for approximately 3 minutes on each side until golden brown. Place on wire racks to let excess oil drain, then drizzle with glaze.
  • Prepare the glaze by combining confectioners' sugar with water until it reaches a drizzling consistency. Adjust as needed.
