Ring in Chinese New Year with this lucky, heartwarming side dish!
Ingredients:
  • 500g packet thin fresh egg noodles
  • 5.00 gm cornflour
  • 42.00 gm soy sauce
  • 1 tsp Chinese five-spice powder
  • 84.15 gm chicken style liquid stock
  • 1/2 tsp sesame oil
  • 18.20 gm peanut oil
  • 1 bunch choy sum, roughly chopped
  • 2cm piece fresh ginger, finely grated
  • 3 green onions, cut into 5cm lengths
  • 150g snow peas, trimmed, halved on the diagonal
  • 500.00 ml beansprouts, trimmed
Instructions:
  • Prepare the noodles according to the package instructions. After draining, transfer them to a bowl. In a jug, combine cornflour and soy sauce, stirring until smooth. Add five spice, stock, and sesame oil, stirring to combine.
  • Heat a wok over medium-high heat and add peanut oil. Swirl to coat the wok. Add choy sum, garlic, and ginger, and stir-fry for 1 minute. Then add onion, snow peas, and beansprouts, and stir-fry for an additional 2 minutes.
  • Pour in the flavorful stock mixture and add the noodles. Stir-fry until the sauce boils and thickens, about 2 to 3 minutes. Serve and enjoy!
