Vegetarian longevity noodles recipe

Celebrate Chinese New Year with a savory vegetarian dish featuring longevity noodles and wish-fulfilling shiitake mushrooms for a flavorful and auspicious meal.
Ingredients:
  • 360g Organic Ramen noodles
  • 9.20 gm peanut oil
  • 150g shiitake mushrooms, trimmed, sliced
  • 150g oyster mushrooms, halved if large
  • 4 green shallots, trimmed, cut into 4cm lengths
  • 1 bunch broccolini, trimmed, stems halved lengthways
  • 150g sugar snap peas, trimmed
  • 100g frozen podded edamame
  • 200g red cabbage, thinly shredded
  • 60ml (1/4 cup) Sweet Soy Sauce
  • 4cm piece ginger, peeled, finely grated
  • 40.00 ml rice wine vinegar
  • 21.00 gm soy sauce
  • Sliced long fresh red chilli, to serve
Instructions:
  • Boil the noodles in a saucepan for 3 minutes, then strain and set aside.
  • In a hot wok, sauté mushrooms and shallot for 3 minutes. Toss in broccolini, sugar snap peas, and edamame, stir-fry for 2 minutes. Introduce cabbage and stir-fry for another 2 minutes, while adding a splash of water.
  • Mix the sweet soy sauce, garlic, ginger, vinegar, and soy sauce together. Pour the mixture into the wok with the noodles and stir-fry for 2 minutes until everything is well combined and heated through.
  • Portion the noodles into individual serving bowls, then generously sprinkle with chili on top for an added kick of flavor.
