Symbolic Chinese longevity noodles.
Ingredients:
  • 250g pkt Chang’s Long Life Noodles
  • 36.40 gm peanut oil
  • 2 red onions, halved, cut into thin wedges
  • 3 garlic cloves, thinly sliced
  • 20.00 ml shredded fresh ginger
  • 400g snow peas, trimmed
  • 250g bean sprouts, trimmed
  • 225g can water chestnuts, drained, thinly sliced
  • 52.50 gm light soy sauce
  • 50.00 ml vegetable or chicken style liquid stock
  • 1 1/2 tsp sesame oil
  • 1 bunch fresh coriander, sprigs picked, chopped
Instructions:
  • Boil the noodles in a saucepan for 5 minutes or until tender. Refresh with cold water and drain.
  • First, heat a large wok over high heat until smoking. Next, add the oil followed by the onion, stir-frying for 2 minutes until light golden. Then, add the garlic, ginger, and snow peas and stir-fry for 1 minute until aromatic. After that, toss in the bean sprouts, water chestnuts, soy sauce, and stock, mixing well. Add the noodles and stir-fry for 1-2 minutes until heated through. Finish by adding the sesame oil and coriander, tossing to combine.
