Ring in the Chinese New Year with a savory bowl of beef noodles for prosperity and long life.
Ingredients:
  • 500g packet fresh thin egg noodles
  • 2 tsp sesame oil
  • 56.88 gm peanut oil
  • 500g beef fillet, thinly sliced
  • 2cm piece fresh ginger, peeled, finely grated
  • 150g snow peas, trimmed, halved
  • 127.50 gm chicken style liquid stock
  • 42.00 gm soy sauce
  • 48.80 gm oyster sauce
  • 500.00 ml beansprouts, trimmed
  • 1/4 tsp ground white pepper
Instructions:
  • Place noodles in a heatproof bowl and cover with boiling water. Let them sit for 5 minutes until heated through, then fluff them up with a fork. Drain the noodles and return them to the bowl before adding sesame oil. Mix everything thoroughly.
  • Start by heating a wok over high heat. Add 1 tablespoon of peanut oil and swirl it around to coat the wok. Add half of the beef and stir-fry for 2 to 3 minutes until it is sealed. Remove the beef to a plate and repeat the process with another tablespoon of oil and the remaining beef.
  • Heat the remaining peanut oil in a wok until shimmering. Stir in the ginger and garlic, and cook for 1 minute. Add the snow peas and half of the stock, then stir-fry for 2 minutes until the liquid is reduced by half.
  • Add the beef along with any juices back to the wok. Toss in the noodles, soy sauce, oyster sauce, remaining stock, bean sprouts, and pepper. Stir-fry everything for 2 to 3 minutes until heated. Serve with a sprinkle of fresh coriander on top.
