Ring in Chinese New Year with auspicious dishes for good fortune and health. Unbroken Longevity noodles ensure a prosperous and long life.
Ingredients:
  • 2 lup chong sausages, thinly sliced (see note)
  • 450g packet fresh thin egg noodles
  • 27.60 gm vegetable oil
  • 4cm piece fresh ginger, peeled, finely grated
  • 2 garlic cloves, crushed
  • 150g oyster mushrooms, thickly sliced
  • 200g fresh shiitake mushrooms, thickly sliced
  • 200g sugar snap peas, trimmed
  • 127.50 gm chicken style liquid stock
  • 42.00 gm soy sauce
  • 100.65 gm oyster sauce
  • 2 tsp sesame oil
  • 500.00 ml bean sprouts, trimmed
  • Fresh coriander leaves, to serve
Instructions:
  • Cook the egg noodles according to the instructions on the packet.
  • In a hot wok, sizzle the oil then toss in the sausage. Cook until golden. Introduce the ginger and garlic, stir until aromatic. Follow with mushrooms, stir until tender.
  • Combine noodles, sugar snap peas, stock, soy sauce, and oyster sauce in the pan and stir-fry for 2 minutes until heated through. Mix in sesame oil and bean sprouts and stir-fry for an additional minute. Serve garnished with coriander.
