Ingredients:
  • 55g (1 cup) bean sprouts, ends trimmed
  • 350g pkt chow mein noodles
  • 48.80 gm oyster sauce
  • 21.00 gm Premium Soy Sauce
  • 10.40 gm hot chilli sauce
  • 5.00 gm caster sugar
  • 36.40 gm peanut oil
  • 2 leeks, trimmed, thinly sliced
  • 2 large garlic cloves, finely chopped
  • 2 tsp finely chopped fresh ginger
  • 20 green prawns, peeled, deveined, tails intact
  • 250.00 ml small fresh coriander sprigs
  • Sesame oil, to drizzle
  • Sliced fresh red chilli, to serve, optional
Instructions:
  • 1. Bring a large saucepan of water to a boil and blanch bean sprouts for 30 seconds. Remove sprouts using a slotted spoon and rinse under cold water. Then, cook noodles in the same boiling water for 5 minutes or until tender. Drain noodles.
  • Mix oyster sauce, soy sauce, chilli sauce, and sugar in a small bowl while you wait.
  • Begin by warming the oil in a wok over high heat. Toss in the leek, garlic, and ginger, and stir-fry until softened, which should take about 1 minute. Next, add the prawns and stir-fry for 1-2 minutes until they change color. Introduce the sauce mixture, noodles, and sprouts, then use tongs to combine everything thoroughly. Finish by tossing in the coriander, drizzling with sesame oil, and optionally sprinkling with chili.
