Foolproof Prime Rib recipe for both boneless and bone-in cuts.
Ingredients:
  • 5 pounds prime rib roast
  • 1 tablespoon kosher salt
  • 2 tablespoons very soft unsalted butter
  • 2 teaspoons freshly ground black pepper
  • 0.125 teaspoon cayenne pepper
Instructions:
  • Prepare all your ingredients.
  • Rub beef generously with salt, then elevate on a rack or crumpled foil for proper air circulation. Refrigerate for 24 to 48 hours.
  • Take it out of the refrigerator and allow it to rest for a few hours until it reaches room temperature (optional).
  • Preheat the oven to a cozy 300 degrees F (150 degrees C) while setting the roast in a roasting pan, ideally on a rack.
  • Combine butter, coarse salt, pepper, and cayenne in a small bowl and evenly spread the mixture over the sides and top of the roast. Sprinkle additional salt on top before adding water to the pan.
  • Roast in the oven until the internal temperature reaches 115 to 120 degrees F (46 to 48 degrees C), approximately 1 hour and 20 minutes (about 20 minutes per pound). Rest covered with foil for at least 20 minutes before serving.
  • Deglaze the pan drippings with flavorful broth or water, creating a delectable sauce to serve alongside the meat.
