Grill spiced baby back ribs low and slow for tender, delicious results.
Ingredients:
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 3 pounds baby back pork ribs
  • 1 cup barbeque sauce
Instructions:
  • Prepare the grill by preheating it to high heat if using gas or setting up charcoal briquettes on one side of the barbeque. Lightly oil the grate.
  • In a small jar, blend cumin, chili powder, paprika, salt, and pepper together by shaking vigorously with the lid closed.
  • Remove the membrane sheath from the back of each rack by running a small, sharp knife between the membrane and each rib and snipping it off. Sprinkle desired amount of rub onto both sides of ribs without thoroughly rubbing it in to avoid the ribs becoming too dark and spicy. Store any leftover spice mix in a jar for later use.
  • Line the lower rack with aluminum foil to catch drippings and avoid flare-ups. Position the ribs on the top rack of the grill, ensuring they are away from the coals if using briquettes. Lower the gas heat to low, close the lid, and allow the ribs to cook without disturbances until the meat easily pulls away from the bone, approximately 1 hour. Check for doneness by using an instant-read thermometer; it should read 145 degrees F (63 degrees C) when inserted into the center of the ribs.
  • Coat ribs generously with barbecue sauce, then grill for 5 more minutes. Present the ribs either whole or cut between each bone and arrange on a serving platter.
