Creamy broccoli and leek soup: rich flavor, low-fat, simply delicious.
Ingredients:
  • 1 tablespoon butter
  • 4 leeks, chopped
  • 0.5 teaspoon fresh ground black pepper
  • 0.25 teaspoon ground coriander
  • 2 heads fresh broccoli, chopped
  • 1 (32 ounce) carton low-sodium chicken broth
  • 1 (12 fluid ounce) can fat-free evaporated milk
Instructions:
  • In a large pot over medium heat, melt the butter. Cook the leeks until soft and translucent, about 5 minutes. Add the pepper, salt, and coriander, and stir well.
  • Set aside a handful of the tiniest broccoli florets. Combine the rest of the broccoli with the leeks and sauté until vibrant, approximately 5 minutes. Pour in the chicken stock and bring to a boil. Lower the heat, cover, and let it simmer until the broccoli is very soft, around 10 to 15 minutes.
  • Blend soup until velvety smooth using an immersion blender. Add reserved broccoli florets and gently simmer over medium-low heat, stirring occasionally, until broccoli is tender, for about 5 to 7 minutes.
  • Take the mixture off the heat and gently fold in the creamy evaporated milk. Serve while still piping hot.
