Low-fat pasta carbonara

Whip up a quick, low-fat pasta dinner in no time!
Ingredients:
  • 400g fettuccine or spaghetti
  • olive oil cooking spray
  • 150g rindless shortcut bacon, thinly sliced
  • 1 large brown onion, finely chopped
  • 3 eggs
  • 50g parmesan cheese, finely grated
  • 40.00 ml flat-leaf parsley, chopped
Instructions:
  • Boil pasta in a large saucepan of salted water according to package instructions until al dente.
  • Spray a frying pan with oil and heat over medium heat. Add bacon and onion, cook and stir for 3 to 4 minutes until golden.
  • After draining the pasta, promptly return it to the hot saucepan. In a jug, whisk the eggs using a fork, then add them to the hot pasta and swiftly stir to coat the pasta evenly.
  • Combine the bacon mixture, parmesan, parsley, salt, and pepper with the pasta and toss over low heat for 1 to 2 minutes until warmed through. Serve promptly.
