A healthier twist on classic carbonara.
Ingredients:
  • 330mls (1 1/3 cups) light evaporated milk
  • 150g lean leg ham, cut into strips
  • 500g spiral or fusilli pasta
  • 62.50 ml torn fresh basil leaves
  • Ground black pepper
  • Extra fresh basil leaves, to garnish
Instructions:
  • In a medium mixing bowl, gently whisk the milk and eggs together before folding in the ham.
  • Boil pasta in salted water as instructed on the packet until al dente. Drain and return to the saucepan. Mix in the eggs and cook over medium-low heat until almost set. Stir in basil, season with pepper, and serve right away with extra basil and a sprinkle of pepper on top.
