Lighten up your pumpkin chocolate chip bread with egg whites for a healthier holiday treat!
Ingredients:
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 cup canned pumpkin pie filling
  • 0.5 cup unsweetened applesauce
  • 2 egg whites
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground ginger
  • 0.5 cup miniature chocolate chips
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan.
  • Combine flour, baking soda, and salt in a bowl. In a separate bowl, mix pumpkin pie filling, applesauce, sugar, egg, egg whites, nutmeg, cinnamon, cloves, and ginger. Gradually stir in the flour mixture until well combined, then gently fold in chocolate chips. Transfer batter to the prepared pan.
  • Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the center comes out clean.
