Delicious low-sugar strawberry jam bursting with fruity flavor, perfect for health-conscious individuals wanting a sweet treat with less sugar.
Ingredients:
  • 1.3333333730698 cups crushed strawberries (wash, hull, then crush one layer at a time using potato masher)
  • 0.33333334326744 cup unsweetened fruit juice, thawed fruit juice concentrate, or water
  • 1.5 tablespoons Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 0.5 cup granulated sugar, sugar substitute, or honey (or less, depending on taste)
  • 2 Ball® or Kerr® Half-pint (8 oz) Jars with lids and bands
Instructions:
  • Get your waterbath canner, jars, and lids ready as per the manufacturer's guidelines if you're preserving. Gather and measure all the ingredients needed for the recipe.
  • In a large saucepan, mix together the prepared fruit and fruit juice. Slowly add in the Ball RealFruit Low or No-Sugar Needed Pectin, then bring the mixture to a rapid boil.
  • If using sugar, sugar substitute, or honey, add to the mixture. Bring the mixture to a full rolling boil and boil vigorously for 1 minute while continuously stirring. Remove from heat and skim off any foam if needed.
  • Carefully pour the steaming jam into each jar, ensuring there is a 1/4 inch space at the top. Clean the jar rims, then place the lids in the center of each jar. Secure the bands snugly with your fingertips.
  • Place the filled jars in the canner, making sure they are submerged in 1 to 2 inches of water. Cover the canner with the lid and bring the water to a gentle, steady boil.
  • Process jars for 10 minutes, adjusting for altitude. Then, remove lid, turn off heat, and allow jars to stand for 5 minutes.
  • Allow the jars to cool completely. After 24 hours, check the lids to ensure they are properly sealed by pressing the center - it should not flex up and down. Clean and store following the manufacturer's guidelines.
