Lower-cal golden syrup dumplings recipe

Healthier twist on golden syrup dumplings with less sugar for a decadent dessert.
Ingredients:
  • 60ml (1 ⁄4 cup) golden syrup
  • 16.00 gm brown sugar
  • 2 x 2cm-wide strips lemon rind
  • 80g butter, chilled, chopped
  • 235g (11 ⁄2 cups) organic wholemeal spelt flour
  • 10.00 gm baking powder
  • 125ml (1 ⁄2 cup) milk
  • 1 egg
  • Natural or Greek-style yoghurt, to serve
Instructions:
  • In a large saucepan with a tight-fitting lid, combine golden syrup, brown sugar, lemon rind, half of the butter, and 625ml (21 ⁄2 cups) water. Stir over medium heat until well combined and sugar dissolves. Keep warm on low heat with lid on.
  • Sift together the flour and baking powder in a big bowl. Sprinkle in a pinch of sea salt flakes. Add the rest of the butter and rub it into the flour using your fingertips until it forms fine crumbs.
  • Whisk together milk and egg in a small bowl until well combined. Pour into the flour mixture. Use a knife to cut and mix until a soft dough forms, adding more milk if needed.
  • Simmer the syrup gently on medium-low heat. Lightly knead the dough on a floured surface until nearly smooth. Divide the dough into 12 portions. Add the dough pieces to the simmering syrup and cover promptly. Cook covered without peeking for 20 minutes or until a skewer comes out clean when inserted into the center of the dumplings.
  • Distribute the dumplings into individual serving bowls, drizzle with the sauce, and garnish with a dollop of yogurt before serving promptly.
